Grilled Quesadillas with Sausage and Summer Vegetables

Cooking Time: 4 minutes
Makes: 6 servings

INGREDIENTS:
1/2 lb Evergood Louisiana Hot Links or Chipotle Sausages, sliced thin
olive oil
8 (7 inch) flour tortillas
1 c zucchini, julienned
1 c fresh corn kernels
2 c Mexican blend shredded cheese (or half Monterey Jack and half Cheddar cheese)
1/4 c red onion, finely chopped
salt and pepper

DIRECTIONS:
Preheat grill to medium (stovetop or barbecue). Meanwhile, sauté onions in olive oil until translucent then add sausage and sauté for 5 minutes. Add the corn and zucchini and sauté for a minute or so to heat the vegetables. Take four tortillas and evenly divide the vegetables, sausage slices, salt, pepper and cheese on each. Top with remaining tortillas and brush with olive oil.
Place on prepared grill, oiled side down for 3-4 minutes or until golden.
Optional: Serve with salsa, sour cream and guacamole.
