Makes: 8 servings
INGREDIENTS:
1 lb Evergood Chipotle Sausages, Louisiana Hot Links or Garlic Sausages, finely chopped
1 lb lean ground beef
1 (16 oz.) can refried beans
1 oz. package taco seasoning mix
1 (14-1/2 oz.) can tomato sauce
1 c diced canned tomatoes
1 (4 oz.) can diced green chiles
1 c ricotta cheese
2 eggs beaten
10 corn tortillas
2 c shredded Monterey Jack cheese
DIRECTIONS:
Preheat oven to 350º
In a large skillet over medium high heat cook beef until browned, and stir in the taco seasoning, refried beans, tomato sauce, tomatoes and chiles. Mix well and bring to a boil. Reduce heat and simmer for 10 minutes. Combine ricotta and 2 beaten eggs. Spray or coat a 13 x 9 inch pan with vegetable oil. Spread half the meat mixture on the bottom of dish. Arrange 5 tortillas over meat. Spread half the ricotta mixture on top. Then, sprinkle with half of the cheese.
Repeat layers.
Bake uncovered until cheese is melted and lightly browned, 20-30 minutes.
Let stand 10 minutes before serving.
