Makes: 10 servings
INGREDIENTS:
6 Evergood Garlic Sausages sliced into rounds
1 (1 lb) package of dried tortellini
1 large onion, chopped
2 red peppers, chopped
2 c cabbage, chopped
1 garlic clove, crushed
2 c beef broth
1 (28 oz.) can crushed tomatoes
1 (15 oz.) can cannelloni beans
1 (8-1/2 oz.) can artichoke hearts
2 T olive oil
2 T basil
salt and pepper
DIRECTIONS:
In a soup pot, sauté the onions in oil until lightly golden, then add peppers and garlic and sauté for 5 minutes more. Add broth, water, tomatoes, cabbage, sausages, basil, salt and pepper. Cook over medium heat for 20-30 minutes.
Meanwhile, bring 2-3 quarts of water in another pot to a rolling boil, add tortellini and when it boils again, cook for 10-15 minutes. Add the cannelloni beans and artichoke hearts and cook 5 minutes more. Garnish with chopped fresh Italian parsley and grated Parmesan cheese
