Makes: 4 servings
INGREDIENTS:
1 lb Evergood Bangers, quartered and sliced
8 eggs, beaten
1/2 c Monterey Jack cheese, grated
1/2 avocado, diced
4 flour tortillas, warmed in oven or microwave
DIRECTIONS:
Sauté sausage in nonstick skillet, drain off most of the fat. Add eggs to same skillet with sausage and cook eggs to desired consistency. Top with cheese and remaining ingredients and fold into burrito.
