Sausage and Cannelini Bean Soup

Cooking Time: 35 minutes
Makes: 4 servings

INGREDIENTS:
3 Evergood Smoked Bratwurst or Polish Kielbasa Sausages, sliced into rounds
1 c onion, chopped
1 T oil
1 garlic clove, minced
1 c baby carrots, halved
4 c chicken broth
2 T fresh basil, chopped
2 15 oz cans cannelloni beans
8 oz baby spinach

DIRECTIONS:
Heat a large saucepan with oil over medium heat. Add onion and sauté until lightly golden, then add garlic and sausage; sauté 3-5 minutes stirring frequently. Add broth, basil, salt, pepper and beans. Bring to a boil, reduce heat and simmer for 5 minutes.
Puree 2 cups of the soup in processor or blender and blend until smooth. Return the mixture back to the saucepan and simmer on the stove for 10 minutes or in a slow cooker for several hours.
Add spinach to soup 15 minutes before serving.
