Sausage and Roasted Vegetable Couscous

Prep Time: 20 minutes
Cooking Time: 35 minutes
Makes: 6 servings

INGREDIENTS:
1 lb Evergood Garlic Sausages, sliced
6 carrots, sliced into 1 inch pieces
4 red potatoes, quartered
2 fennel bulbs, quartered
4 T olive oil
2 T coarse grained salt
1 lb asparagus
1 yellow onion, quartered
2 c couscous
2 1/2 c water

DIRECTIONS:
Preheat oven to 450º
Brown sausage in a skillet over medium heat, then cover and set aside.
Place carrots, potato and fennel in a baking dish, toss with 2 tablespoons of oil and 1 tablespoon salt.
Bake at 450º for 20 minutes, stirring after 10 minutes.
Combine asparagus, onion and remaining oil and salt.
Bake at 450º for 15 minutes.
Prepare couscous per instructions on package.
Spoon couscous into a serving bowl surround with roasted vegetables and sliced sausage.
