Sausage with Peppers and Onions

Makes: 6 servings

INGREDIENTS:
8 Evergood Polish Kielbasa Sausages
2 T olive oil
2 onions, sliced
2 green peppers, seeded, halved and sliced
2 red peppers, seeded halved and sliced
3 T chopped fresh basil
1/4 c red wine
1 8 oz can tomato sauce
1/2 t red pepper flakes or to taste

DIRECTIONS:
Place sausages in a large skillet over medium heat, and brown on al sides. Remove from skillet and slice. Remove excess fat, add olive oil as needed and stir in onions, peppers, red pepper flakes, and basil. Cook for 5 minutes over medium heat, then add sliced sausages, wine and tomato sauce. Cover and simmer over low heat about 30 minutes. The sauce should be thick. If not, cook longer, uncovered.

Serve immediately over hot pasta or on hoagie rolls with provolone cheese melted on top under the broiler.
