Slow Cooker Jambalaya

Cooking Time: 450 minutes
Makes: 12 servings

INGREDIENTS:
1 lb Evergood Chipotle Sausages, sliced
1 lb skinless, boneless chicken breasts, cut into cubes
1 (28 oz.) can diced tomatoes with/ juice
1 large onion, chopped
1 large red bell pepper, chopped
1 c chicken broth
1/2 c chopped celery
3 t Cajun seasoning
1 t cayenne pepper
1 lb cooked shrimp
3 1/2 c cooked rice

DIRECTIONS:
In a frying pan sauté the onion in 2 teaspoons oil until translucent or lightly golden. Add everything but the shrimp and rice to a slow cooker. Cook and cover 7-8 hours on low or 3-4 hours on high.
Add the shrimp and rice during the last 30 minutes of cooking time.
