Makes: 8 servings

INGREDIENTS:
1 lb Evergood Hot Link Sausages
2 c sharp shredded cheese
1/2 c chopped onion
1 (4 oz.) can diced green chilies
10 eggs lightly beaten
1/2 t pepper

DIRECTIONS:
Preheat oven to 375º.
Lightly grease a 9 x12 inch baking dish.
Chop sausage into bite sized pieces and sauté over medium heat until lightly browned. Drain and remove sausage and spread evenly into bottom of dish.
Add onions to skillet and sauté until golden brown.
Sprinkle cheese, onions and chilies over sausage.
Lightly beat eggs and add pepper.
Bake for 20-25 minutes or until a knife inserted into the center comes out clean.
Cool for 10 minutes, then cut into squares.
